A few nights ago I made this Chicken Taco recipe. I wasn't sure how much chicken to use so I used 5 good sized breasts. They cooked perfectly on low for 7-8 hours. I shred the chicken and put back in for another 30 minutes to let it soak up some more of the flavor. 

The end result was delicious and everyone in the family loved it. I froze quite a few single servings that I ate for lunch and we had the same dinner another night during the week. Definitely got my moneys worth on this one. :) 

My next mission is to make some homemade taco seasoning. A LOT less sodium then the packets!!

Tuna Noodle Casserole

This Skinny Tuna Noodle Casserole was full of flavor and so delicious. My only memories of Tuna Casserole was the slop they used to serve in my elementary school cafeteria. BLAH! Glad I decided to trust Gina and make this one:} Soooo good! The servings were big and definitely filling. Michael really enjoyed it and Wesley even took some in his lunch today. I was out of mushrooms and sherry so that was the only thing I left out.

Spinach Lasagna Rolls

On Thursday night I made Spinach Lasagna Rolls for the second time. Another fabulous recipe from Gina over at Skinny Taste


These rolls are delicious and filling. I am a sauce lover so I added more sauce to mine which didn't change the caloric count too much. I used the Light Ragu again! Mmmmmm! I also only filled 6-7 lasagna rolls using the 1/3 measurement she suggests. Feeds the family plus I get a yummy lunch the next day. One roll is definitely enough unless your Michael and can eat 3:) I do not suggest using the wheat lasagna rolls.........blah! They are gross and totally not worth it. I LOVE wheat pasta normally, but for some reason the lasagna noodles were icky. This time I used regular noodles and it was a HUGE improvement! I think that I might add a little ground turkey to the mix next time.

BBQ Chicken Sandwiches {slow cooker}

This was so very delicious left over. I made this meal in the crockpot several weeks ago and froze it for 3 separate meals. Last night I tossed one in the microwave for 10 minutes and it fed all of us, plus one of Wesley's buddies. Having friends over? This is a simple way to feed everyone:} 


I didn't follow the exact recipe since I had different spices. I just tossed a bunch of stuff in the crock pot. I also used all BBQ sauce....no ketchup. Ours were served up on whole wheat hamburger buns, but I would like to try some other low calorie options. Or use an Artisan Flat bread to make a BBQ chicken pizza. Mmmmmmmmmm!

Tortellini Soup

You will have to click over to the Tortellini Soup recipe to see a picture since she wont allow uploading of her pics to other websites. This soup was so quick, easy, and delicious! From start to finish it took about 15 minutes, the longest part was waiting for the chicken stock to boil. Michael and Wesley both gave it 2 thumbs up. Wesley even said "The spinach is the best part." WHAT? I'll take that, lol!! 

It was definitely only about 3 servings which was fine since it's so filling. Next time I'm going to double the recipe so I can have it for lunch. According to the comments on the website the soup still tastes great as left over when you don't over cook the tortellini. 

YUMMERS!!!!

Lighter Baked Macaroni and Cheese

Eating right DOES NOT mean you have to give up delicious and flavorful food! This recipe is proof of that. Tonight's dinner once again is brought to you by Gina from Skinny Taste. 



I switched mine up just a little. I used part-skim mozzarella cheese because I forgot to get the cheddar, but it still tasted delicious. I also used 1% milk instead of the skim. The whole family loved it except my daughter Lani of course. She has a dairy allergy, but is also VERY picky so she wouldn't have eaten this anyway. Wesley who claims to HATE spinach didn't even notice that I added it. 

Since the servings are so filling we will have another meal for leftovers later in the week.

Homemade Spinach Manicotti

One of my all time favorite low-fat blogs is Skinny Taste! Tonight for dinner I made Gina's Homemade Spinach Manicotti and it was absolutely delicious. Soooo full of flavor and incredibly satisfying. 


I went out and bought a 10 inch skillet to make her homemade crespelles. After about the first 5 I was whipping those babies out one right after another. It was worth the time I spent. One change I made was using Light Ragu Pasta Sauce in place of what she suggested. 

The filling could definitely be used in lasagna roll ups or stuffed shells. 

Thank you Gina for helping me along my weight loss journey! You've made me realize that I don't need to eat those nasty frozen meals to lose weight and that healthy food can taste delicious.
